Clean Eating Italian Style Meatballs

I haven't made meatballs in forever. I just honestly never think to.  Yesterday though, for whatever reason, I had meatballs on the brain!  While it was a last minute, whip 'em together kind of meal... you know, the kind you start out and don't really know how it's all going to end up... I'm so glad to report that it all turned out beautifully!  The best part was that when I was done it occurred to me that from an outsider perspective, one might think I had planned the meal all week long. Pat on the back? You bet I did!  They were so friggin' clean and absolutely delish!  Mr. & I both said at least a half a dozen times while chewing..."Mmm, these are so good!" 

Here's my "make it up as I go" recipe! Feel free to get creative with how you serve them!  Endless possibilities! :) 

Meatball Ingredients
1.5 Pounds Venison Burger - you could of course use lean ground turkey burger
2 Egg Whites
1/2 Cup Wheat Germ
1/2 Cup Wheat Flakes - or old fashioned rolled oats
1/4 Cup Flax Seeds
1 Small Onion - Diced
2 Cloves of Garlic - Minced
2 Tbsp Basil -
Organic Dry or Fresh Finely Chopped
2 Tbsp Parsley - Organic Dry or Fresh Finely Chopped
2 Tbsp Oregano - Organic Dry or Fresh Finely Chopped
2 Tsp Ground Pepper
1 Tsp Sea Salt

Mix & Mash all ingredients above together.  Form into "meatballs".  Makes 15+ depending on size of balls you choose...I did medium. Add some canola oil to a skillet and place meatballs into the pan; sear all sides on medium heat. Once done, remove and place into a 9 x 13 baking dish. 

Next - Preheat oven to 400 degrees. 

Ingredients for Pasta Dish
2 Organic Portabella Mushrooms
2 25.5oz of Organic Pasta Sauce
1 8oz Box of Quinoa Shells

Take the portabella mushrooms, wash, then cut into large chunks and place inside the baking dish along with the meatballs.  Pour organic pasta sauce over them (the meatballs and mushrooms. Cover with aluminum foil and bake until done  - 25 to 35 minutes.
I served over greens and quinoa pasta.  YUM!
